About Whipped Cream Chargers
Also known as a whipping siphon, whipped cream chargers originated in Europe. They are made of a canister and a screw on lid with a trigger handle, a spout to dispense the whipped cream, and a device which allows a nitrous oxide (N2O) gas cartridge to pressurize or “charge” the canister.
How It Works
Once the gas is introduced to the canister, the canister becomes pressurized and the fat-soluble gas dissolves into the cream (much like carbon dioxide in soda). A few shakes of the canister allow the gas to fully dissolve and the charger is ready to use. To dispense the whipped cream, turn the canister upside down to aim the nozzle where the cream is to go. Pressing the trigger handle then forces the cream out of the canister. As the pressure is released the gas turns into bubbles (again, like the soda comparison) which in turn makes the cream frothy and whipped.
Nice To Know
Because nitrous oxide inhibits the growth of bacteria, cream will stay fresh in the charger for up to two weeks when kept in the refrigerator. Use only heavy whipping cream with a fat content of 32%. You can always top your drinks with plain whipped cream, but don’t stop there. Add a little creativity with flavorings and colors. Here are a few flavor combinations to try. (All recipes are for 1/2 liter chargers. Double the recipes for 1 liter.)
